fix: revert incorrect docs.sh renames (README.md URL, configLegacyName)

- protocol/README.md: restore historical GitHub URL path (src/ripple/)
- Config.cpp: restore configLegacyName as "rippled.cfg" (legacy name
  must remain as-is for backward compatibility)
